First, peel the onions and slice them thinly.

Add the flour to the bowl of a stand mixer and add the yeast. Pour in the room temperature water and mix until just combined.

Add the lard or butter and knead with the dough hook for 5 minutes. Add the salt and knead for another 5 minutes.

Add all the sliced onions and knead for a couple more minutes. Remove the dough hook, shape the dough evenly, and cover the bowl with plastic wrap. Let it rest for about 2 hours.

After resting, punch down the dough with your hands. Place it in a well-oiled rectangular baking pan and press it out evenly with your hands.

Let it rest for another 40 minutes.

Bake in a preheated convection oven at 350°F (180°C) for 25 to 30 minutes, until a golden crust forms on top.
