Butter chicken roast combines the rich flavours of butter and spices to create a deliciously juicy and tender dish. This butter chicken roast is not only simple but also delivers a mouthwatering experience perfect for family dinners.
I usually do not like the traditional butter chicken, but this recipe is a game changer! Husband loved it sooo much!
If you don’t like cooking it over the stove top, you can put everything in a baking dish – curry slathered chicken and the sauce – then you put it in the oven for 45 minutes. The end result tastes just as good as regular butter chicken. I would say better. On the stove it will take only 20-30 minutes! Besides, you would need to remove the chicken from the dish and pop the sauce back into the oven to thicken. So I prefer the stove method!
This is a simple recipe which calls for normal spices and stuff, but this roast gets its own flavour when it is cooked in butter.

Blend in a food processor/chopper half cup fried onions, garlic, cumin seeds and 1 ½ tablespoon Kashmiri chilli powder and set aside.

In a large bowl add the chicken, melted butter, remaining fried onions, lemon juice, yogurt, ginger-garlic paste and all the spices. Mix well and marinate for at least 1 hour.

In a dutch oven melt the butter and add the chicken with the marinade.

Mix well and cook till colour changes.

Add the spice blend and water and mix well.

Cover and simmer till chicken is cooked through.

Add cilantro, mix well and serve hot.
