Grate the onions very finely.

Sauté the onions until they are well browned.

Add the sifted flour. Gradually add the very hot milk while stirring. Add salt and nutmeg. Set aside.

MUSHROOMS:
Sauté the white mushrooms with garlic, salt, and pepper. When cooked, add the morel mushrooms that have been soaked in water.
Mix all the mushrooms with one third of the béchamel. Let cool for a few hours. - 5
CHICKEN:
Mix the chicken with one third of the béchamel. Let cool for a few hours. - 6
HAM:
Mix the ham with one third of the béchamel. Try to make sure the mixture is not too hot so the ham doesn't cook. Let cool for a few hours. - 7
Once each mixture has rested and cooled for a few hours, shape the croquettes, dip them in beaten egg, and coat with breadcrumbs. Fry over high heat, watching carefully until golden brown.
