Lemon Dijon Fish Fillets

This dish can be made with just about any type of white fish or salmon. I used Swai this go around because it's what we had on hand needing to be used. Not the best photo because I had to snap it of my husband's fillet while he was trying to eat since it was the last one we had.

Lemon Dijon Fish Fillets
This dish can be made with just about any type of white fish or salmon. I used Swai this go around because it's what we had on hand needing to be used. Not the best photo because I had to snap it of my husband's fillet while he was trying to eat since it was the last one we had.

Preheat oven to 350°F. Line a baking sheet with parchment paper. Pat.fish dry with paper towels to remove excess surface moisture and place.on baking sheet.

In a small bowl combine all remaining ingredients. Taste and adjust salt and pepper as desired.

Brush half the glaze over the fish fillets. Place fish in oven and bake 15 minutes or until fish is just barely done.

Remove from oven. Switch oven to broiler mode. Brush remaining glaze over fish. Return fish to oven and broil 4-5 minutes or until glaze begins to caramelize, keeping an eye on the fillets to ensure they don't burn.

Remove from oven and serve immediately. Goes great with rice pilaf and/or a crisp side salad.
