A Croque-Monsieur made with local products and delicious sheep’s milk cheese for a rich, savory flavor.

Slice 8 pieces of sandwich bread. Spread a little butter on each slice. Place half of the slices, buttered side up, on a baking sheet.

Place a folded slice of ham on each piece of bread. Add a slice of sheep’s milk cheese to each. Reserve about 1/4 cup (25 grams) of cheese for topping. Cover with the remaining bread slices, buttered side facing the cheese.

In a bowl, mix the heavy cream with the reserved grated sheep’s milk cheese. Spread this mixture on top of each sandwich. Bake in a preheated oven at 425°F (220°C) for 10 minutes, watching closely so they don’t get too brown. They’re ready when golden.

Serve ideally with a fresh local salad.
