If you have leftover bánh tét after the New Year, slice it and wrap each piece to store in the freezer. When you're ready to eat, take the slices straight from the freezer and fry them in oil—no need to thaw.

Fry the bánh tét over medium-low heat so it gets crispy and golden without burning.

Once both sides are evenly golden and crispy, remove the slices and place them on a plate lined with paper towels to drain excess oil. This dish is delicious served with pickled vegetables and pickled scallion heads.
