Valentine Sugar Cookie Cake

This is a yearly event. I bake all my kids their own Valentine cookie. The pictured one is 8”, that size is for the “big” kids. I bake 6” cookies for the “little” kids (grands). Some like them plain, some like them with frosting. This one is/was mine. Of course, I let them choose the flavor: sugar cookie, chocolate chip, oatmeal raisin, molasses (new request this year)

Valentine Sugar Cookie Cake

Ingredients

30-35 minutes
1 serving
  1. 2 cupsself rising flour
  2. 3/4 cupssugar
  3. 2eggs
  4. 2 tspvanilla extract
  5. 2/3 cupcooking oil
  6. FROSTING:
  7. 1/2 cupunsalted butter
  8. 2 oz. cream cheese
  9. 1 tspvanilla extract
  10. 1/4 tsp salt
  11. 3-4 cups sifted powdered sugar

Cooking Instructions

30-35 minutes

    Preheat oven to 325*. Grease pan with “Cake pan Mousse” (in my recipes)

    Mix flour, eggs, oil, sugar and vanilla well. Spoon into 8” heart (round) pan. Flatten out to edges to completely cover bottom of pan.

    Bake 30-35 minutes, until golden brown on top and toothpick inserted comes out clean. Remove from oven, let cool in pan 5 minutes, turn out and set top side up on cooling rack. Let completely cool.

    FROSTING: beat butter until soft, mix in cream cheese, add salt and vanilla. With mixer on low speed, beat in powdered sugar. Tiny frosting or apply as is, do it up decorative or just smooth it on.

I love to bake sweet stuff, with a bit of savory tasty cooking thrown into the mix. Just good ol’ southern cuisine. Most of my recipes were handed down from my Great & Grand Grannies. If they didn’t grow it or raise it, it wasn’t eaten. My hubby and I have alot of food allergies so it gets challenging sometimes to make things that we both can eat. Neither of us can eat shellfish, which is sad, considering where we live, cuz it’s everywhere! Y’all won’t find any shellfish /saltwater fish recipes here. Some fresh water fishes, maybe. Hope y’all enjoy my recipes!
