Ingredients

2-4 people
  1. 400-500 GramsThai or sea Clams
  2. 1Large Bunch Sweet Thai Basil
  3. 3-4Thai Long Chilies
  4. 3large cloves Garlic minced
  5. 2 TablespoonsThai Roasted Chili Sauce
  6. 1 TablespoonOyster Sauce (optional)
  7. 1-2 teaspoonsFish Sauce
  8. 1 teaspoonSugar
  9. 5Tsbl Cornation Milk. (- not condensed)

    Wash the Clams well so no sand or debrise. You need to prepair all ingrediants as when you cook this goes fast :) also a large pan with a lid helps. Chop garlic and Chilli as fine as you can. Mix the Chilli sauce, sugar, fish sauce, Oyster Sauce (optional) and Milk together. Then we can cook.

    Put a few drops of oil into a large pan - I use a non stick frying pan with lid. heat on medium heat and add the garlic - just cook but not brown then add the chilli and cook for 1 min.

    Next add the chilli paste mixture and cook for about 30 seconds until all combines now turn up the heat and add the shells. Stir to coat well and quickly put on the lid to trap the amazing steam. The shells should open in about 2-3 mins.

    If the sauce looks to dry you can add a few Tbsp of water or a little more of the milk. then put in the Basil stir again and Serve imediately while steaming hot. ENJOY with Steam Jasmine rice.

Well I started with Cookpad during Covid....... Guess alot of us did, Amazing Site great to share with passitionate people. I have no formal training but have eaten in some of the best fine dinning restraunts in the world and also learnt from My mum and Grandma with "a pinch of" and "about a handfull" - if we share we love.
