Scallops cook almost instantly, very quickly. And any salad mix will do for this dish. The brighter the leaves in the salad, the more festive the scallops!

Salt fresh scallops and season with ground black pepper to taste.

Fry in a preheated frying pan, in a small amount of olive oil, for one and a half minutes on each side.

Place the scallops on the prepared salad mix.

Heat some olive oil in a small frying pan or saucepan. Add minced garlic and a pinch of aromatic herbs. Fry for just a minute. Add lemon juice. Pour the dressing over the scallops.

Enjoy the salad warm or cold.
