Ingredients

20 minutes
4 people
  • 1 bagtacos
  • 2red onions chopped
  • 3Bell pepper diced
  • 1lg can of corn
  • 1 canBlack olives pitted sliced
  • 1 canjalapeno
  • 1 canbeans
  • 3large tomatoes diced
  • 2 tspCumin, salt, pepper
  • 1 bagsTaco blend shredded cheese

Steps

20 minutes
  1. 1

    Set to oven to 400 F. Line the baking sheet with parchment paper. Line the tacos on the sheet.

    Sautee onions and peppers with olive oil. Until they are soft, add pepper and cumin.

    Pour evenly the onions and peppers on the tacos. Add the other ingredients except the tomatoes. Cook for 20 minutes.

    After you are done serve with diced tomatoes

I used to be a runner. One day middle of the run, I had my feet numb up to my knee. It was sciatica from a car accident years ago. Then because having problems with my Achilles, I started using a cane. Now I changed my diet completely... no more sugar or process foods. My recent recipes are vegetarian, I do not eat meat anymore! Also no sugar, flour and very low carbohydrate meals .This is my journey now. Good luck on yours! 😄✌️
