Spinach Patties
They are delicious and very easy to make.
Steps

Place the spinach in a pot with a little water and salt. Bring to a boil and cook for 5 to 10 minutes. Once cooked, drain the spinach in a colander and let it drain as much as possible. Set aside.

In another saucepan, boil the tomatoes with a little water. Then transfer them to a blender along with the garlic and onion, and blend until smooth. Set aside.

In a large bowl, beat the egg whites until stiff peaks form. Add the yolks and mix well, then add the spinach, cheese, and ham, and combine everything together. This is the mixture you should have.

Heat a skillet with enough oil. Form the spinach mixture into small patties and cook them in the hot oil until well cooked.

Once cooked, place the patties in a colander to drain any excess oil.

When all the patties are done, in a large pot with a little oil (the same one used to fry the patties), pour in the tomato sauce, add salt, and the green chili pepper to give it a bit of heat.

Once the sauce is seasoned, add the patties and the water. Let everything simmer for about 10 minutes so the flavors blend and the patties soften.
