Ingredients

  • 1salmon fillet 1.5kg
  • 2 tbspsugar
  • 4 tbspkosher salt
  • 2 tbsppepper

Steps

  1. 1

    Wrap salmon with salt, sugar and pepper

  2. 2

    Brine for 4 hours

  3. 3

    Wash and dry with paper towel

  4. 4

    Rest for hour or two

  5. 5

    Smoke on 82c for 2-2.5 hours until 63c inside

  6. 6

    Rest for 30 min, wrap and refrigirate
