Malpua with Rabri

Malpua is a very delicious and traditionally popular dessert from North India. It is made with whole wheat flour or all-purpose flour, then dipped in sugar syrup. Malpua is very soft and is often served with rabri (thickened sweetened milk). It is usually prepared on special occasions or festivals.

To make the sugar syrup, heat water in a pan and add sugar. Once the sugar dissolves, check the consistency. Add saffron as well.

To make the rabri, heat milk in a pan and bring it to a boil. Soak saffron in milk and set aside.

Slice the almonds and pistachios. When the milk starts to thicken, add sugar and the saffron-soaked milk.

Add cardamom powder. The rabri is ready. Transfer it to a bowl.

To make the malpua, take whole wheat flour and semolina in a bowl. Gradually add milk to make a batter.

Heat a little ghee in a pan for each pancake. Pour the malpua batter into the pan.

Cook the malpua on both sides until golden brown.

Then dip the malpua in the sugar syrup. Remove after a short while.

The malpua is ready. Serve the malpua with rabri.
