Serves 2 servings
  1. 1 cupwhole wheat flour (for Malpua)
  2. 1/4 cupsemolina
  3. 2 cupsmilk
  4. 2 cupsghee (for frying Malpua)
  5. 4 1/4 cupsmilk (1 liter, for Rabri)
  6. 1 tablespoonsliced almonds
  7. 1 tablespoonsliced pistachios
  8. 1 teaspooncardamom powder
  9. 1/4 cupsugar
  10. 10-12saffron strands soaked in milk
  11. 1 cupsugar (for syrup)
  12. 1 cupwater
  13. 5-6saffron strands

    To make the sugar syrup, heat water in a pan and add sugar. Once the sugar dissolves, check the consistency. Add saffron as well.

    To make the rabri, heat milk in a pan and bring it to a boil. Soak saffron in milk and set aside.

    Slice the almonds and pistachios. When the milk starts to thicken, add sugar and the saffron-soaked milk.

    Add cardamom powder. The rabri is ready. Transfer it to a bowl.

    To make the malpua, take whole wheat flour and semolina in a bowl. Gradually add milk to make a batter.

    Heat a little ghee in a pan for each pancake. Pour the malpua batter into the pan.

    Cook the malpua on both sides until golden brown.

    Then dip the malpua in the sugar syrup. Remove after a short while.

    The malpua is ready. Serve the malpua with rabri.
