I made this cake for my birthday and it was absolutely delicious! I went to town the first day, have been eating slices out of the fridge all week, and just froze some leftover slices. So scrumptious and doesn't make me sick after eating it🤤❤️ #march2026 Gluten Free, refined sugar free

Ingredients

12 slices
  1. Cake
  2. 4 cupsoats
  3. 1/2 cupmaple syrup
  4. 3/4 cupapplesauce
  5. 2eggs or 2 flax eggs
  6. 3/4 cuporange juice
  7. Orange zest
  8. 2 teaspoonsbaking powder
  9. 1 1/2 teaspoonsbaking soda
  10. Cancrushed pineapple
  11. 1 1/2 cupsshredded carrot ~3 large carrots
  12. 1/2 cupraisins
  13. 3/4 cupchopped walnuts/pecans
  14. Cinnamon
  15. All Spice
  16. Nutmeg
  17. Frosting
  18. 8 ozcream cheese
  19. 1/2 cupGreek yogurt
  20. 5dates and water to blend into paste
  21. 1/2 cupmaple syrup

Cooking Instructions

    Blend 2 1/2 cups of oats into fine oat flour, blend the maple syrup, applesauce, eggs, orange juice, zest, baking soda, powder, spices and a little more than half of the crushed pineapple can.

    Shred the carrots and add the remaining pineapple, oats, raisins, coconut and nuts

    Mix in your blended mixture slowly with your whole ingredients

    Spray three cake tins with canola oil or spread butter

  5. 5

    Evenly pour batter and cook for 20-25 minutes until golden brown or a clean tooth pick

  6. 6

    Let cool for 10 minutes before removing. Let dates soften in warm water or almond milk and blend. Whisk all of the frosting ingredients together and slowly layer your cake. Feel free to chop up nuts within the layers. Top with whatever you want and enjoy!!!
