I made this stir-fry for my family and they all loved it! We almost didn't have enough to go around. I hope you enjoy this healthy stir-fry as much as I did🥰

Drain the water out of your tofu, either with a tofu press or wrapping in paper towel and pressing heavy objects on top for 30 ish minutes.

Mix together the cornstarch, 2 tablespoons of soy sauce and cayenne. Chop up the tofu into cubes, coat them in oil and your mixture, and air-fry at 400 F for 10 minutes, shaking halfway through.

Saute the peppers, carrots, zucchini, broccoli, water crests, diced onion, minced garlic, and grated ginger.

Cook the rice in 1 1/2 cups of water

Mix together vegetable broth, 2 teaspoons of cornstarch, and a tablespoon of soy sauce. Pour this in with your veggies and tofu.

Serve the veggie-tofu over the cilantro rice and garnish with green onion and sesame seeds. Enjoy!
