Ingredients

45 minutes
2 people
  1. 1red snapper (about 2 lbs/900 grams)
  2. 1small amount of each: shiitake mushrooms, wood ear mushrooms, cloves, dried jujube (red dates), enoki mushrooms, lotus seeds, goji berries
  3. Carrot, lime leaves, ginger, tangerine peel, onion, cilantro stems, chili pepper
  4. Fish marinade
  5. 2 tablespoonsfish sauce (30 ml),
  6. 1 tablespoonsugar (12 grams),
  7. 1 tablespoonchili sauce (15 ml),
  8. 1 tablespoonsesame oil (15 ml), garlic, black pepper

    Soak all dried ingredients in hot water until softened. Thinly slice the carrot and ginger. Rinse the fish with vinegar to remove any fishy smell, then pat dry. Mix the marinade ingredients together and rub evenly over the fish. Arrange the prepared ingredients on and inside the fish.

    Evenly scatter the seeds and other toppings, placing the cordyceps on top. Drizzle 1 tablespoon of cooking oil over the fish. Place the fish in a steamer over high heat. Once it starts to boil, reduce to medium heat.

    Steam the fish for about 20 minutes until cooked through. Transfer to a serving plate and sprinkle with cilantro and black pepper.
