Sieve flour and set aside.
Grease tray and set aside.
In a large bowl add water, citric acid, salt, turmeric and sugar. Mix well until all dissolved. Add in flour and make a batter.
Boil water in a steamer. - 2

Divide the mixture and baking soda in 2 parts.
Take baking soda and a tablespoon of water and add to 1 part of batter. - 4

Whip in one direction until nice and fluffy. Transfer in a greased tray and steam for 18 to 20 minutes or until a toothpick comes out clean. Repeat with the second batch. Pour the tadka over the top on both trays.

Ingredients for tempering:-
1 teaspoon mustard seed
1/2 teaspoon cumin seeds
1 tablespoon sesame seeds
1 teaspoon whole coriander seeds
Few curry leaves
1 green chilli slits
1 1/2 cup Water
4 tablespoon sugar
3 tablespoon oil
