Combine all the ingredients to pressure cook in a pressure cooker.

Take a clean white cloth that is 10cmx10cm square (Or use the infuser tool.) place all the spices in it and tie a knot to the cloth. Tie the two opposite sides and the other two opposite sides. Put the infuser in the pressure cooker. Cover the cooker and pressure cook on medium heat for 20 min or for 5 whistles. Let it cool and then open the lid. The chhole must have been thoroughly cooked.

Remove the infuser and start the heat again. Add Kashmiri chilli powder and kasoori methi. Combine well. Add salt if needed. Lightly mash chhole to make the curry look homogeneous and a bit thick. Simmer for 3-5 min or till You get the right consistency.

In a tadka pan heat up ghee. Crackle cumin seeds. Add asafoetida and then chillies and ginger. Turn off the stove. Allow the ginger and chilli to fry a bit. Meanwhile the ghee will also cool. Down a bit. Add chilli powder and chhole masala. Mix and quickly pour over the chhole. Combine well.

Add lemon juice and chopped coriendar leaves. Combine well and serve with Bhature or kulche.

I tried it with tacos as suggested in the source recipe, but I didn't enjoy it. Better to serve it in the traditional way.
