Fried Pompano W/ Fresh Tomato Fish Sauce | Cá Chiên Sốt Cà

One of my favorite Vietnamese home comfort food! This dish brings back nostalgic memories of when mom used to cook dinner for our big family of 8. I remember never liking fish when I was little, but this dish made me took a liking to it. I realized that it’s not fish that I don’t like, it’s the way it’s prepared that I was picky about. This is a crispy fried fish with a sweet, sour, and savory sauce that’s full of color, flavor, freshness and umami.

Season your fish lightly and evenly with salt and pepper.

Deep fry your fish with enough oil to cover half of the fish steak. Flip to cook both sides and done when gold and crispy. Take out and let rest on a paper towel to soak up the grease.

In a pan with some oil, sauté minced garlic, shallots, and diced white onions till translucent.

Add diced tomatoes, green onions, fried shallots, and season with: sugar, fish sauce, chicken bouillon, & msg. Add diced chili for spice.

Simmer on medium- low heat for 5 min. Serve hot under fried fish.
