Melt the butter, remove from heat, then add the oil and salt. Mix briefly and set aside to cool slightly. In a separate bowl, combine the semolina, flour, and vanilla. Add the butter mixture and rub it in with your hands until crumbly. Cover and let rest for 1 hour or overnight.

In another bowl, knead the date paste with butter until soft. Add sesame seeds and shape into balls, about 9 to 11 grams each.

Mix the semolina mixture well with your hands, then add orange blossom water and a little water, just enough to bring the dough together without kneading. If making a large batch, add water gradually. Shape the dough into balls, about 45 grams each. Flatten each ball, place a date filling ball inside, seal well, and place in a mold. Press gently, then bake in the oven. Let cool completely, then dip in syrup and decorate with sesame seeds or nuts as desired.
