Heat a pot, add the cooking oil and pork, and fry until the pork is golden brown. Remove the pork and set aside. Add 1 tablespoon of sugar to the pot and cook until it turns a caramel color, then add the shallots and sauté until fragrant.

Add the tuna and the remaining ingredients to the pot. Pour in 3 tablespoons (about 50 ml) of boiling water and continue cooking. Skim off any foam that forms.

Simmer on low heat until the sauce thickens and becomes glossy. Taste and adjust the seasoning to your family’s preference. I use homemade traditional fish sauce, which is saltier than commercial brands, so adjust as needed.

Now you have a delicious pot of braised tuna! Serve with fresh vegetables, cucumber, or boiled greens.
