Khira Gaitha Pitha is Odisha's creamy delicacy might be simple but needs precision.
Similar to the kheer puli, where the rice flour balls are cooked in flavoured milk along with some saffron strings.
These khira Gaitha Pitha absolutely melt in your mouth .
One such pitha was recently brought to limelight was the Gaintha Pitha, which gave Odisha's Avinash Pattanaik directly entry to the MasterChef 2023 & inspired me to cook this delicious ,innovative dessert with the main ingredient Nestle Milkmaid
Avinash made the dessert visually much appealing & beautiful by adding a dash of blue colour, using the aparajita or blue pea flower .

Avinash made the dessert visually much appealing & beautiful by adding a dash of blue colour, using the aparajita or blue pea flower .

In a pan boil water, a pinch of salt, 1 tsp sugar, 1 tsp ghee.

Once the water comes to a boil add the blue pea flowers/ aparajita flowers & give it a boil for 2 mints on medium flame.The water has become blue in colour.

Then remove the blue pea flowers from the water, then on low flame add the rice flour little by little with your one hand & at the same time stirring constantly with your other hand.

Keep stirring constantly to avoid forming lumps.

Continue the process till the water gets absorbed & comes together as a dough.

It has started leaving the pan forming a dough.When it does not feel sticky to the hand, switch off the flame & transfer to a plate

When the dough is warm knead till it becomes soft & smooth.

Make small smooth balls out of it by greasing your hands with little ghee.Flatten the balls & with the help of a tooth pick give beautiful flower shape.

Now in another pan boil milk, 1 pouch / packet milkmaid & mix well.Add some saffron to it.Add the grated coconut.

Now dunk the beautiful blue pea flowers into the milkmaid, saffron milk & let them boil.

Once done take it out on a serving plate & serve hot or cold.
