Chicken & Potato Balls

The other day, when I was preparing Chicken Patties, I thought about extra ingredients to add. I always add Onion OR Spring Onion, sometimes add Carrot, Zucchini, Broccoli, Mushrooms, etc. Then I realised I had never ever added Potato. Today I tried to make Chicken & Potato Patties, but I decided to make bite-size balls and fried them. I used 250g Chicken Mince and 2 Potatoes, and all disappeared instantly. I will double the recipe next time.

Ingredients

20 minutes
3 to 4 Servings
  1. 2medium size Potatoes *about 400g
  2. 1/2Onion *very finely chopped
  3. 1small clove Garlic *grated
  4. 250 gChicken Mince
  5. 1/2 teaspoonSalt
  6. 1/4 teaspoonGround Pepper
  7. 2 tablespoonsgrated Parmesan Cheese
  8. Oil for rolling and frying
  9. Ketchup OR Tomato Sauce to serve

Steps

20 minutes
  1. 1

    Peel Potatoes, coarsely grate, squeeze to remove excess water, and place in a mixing bowl. Add all other ingredients, and mix to combine.

    Wet your hands with Oil and roll the mixture into balls, about 3cm in diameter.

  3. 3

    Heat Oil, at least 5cm deep, and fry the balls. Turn them over a few times. When nicely browned and cooked through, transfer to a rack OR a plate lined with paper towel.

  4. 4

    Serve with Ketchup, Tomato Sauce OR your favourite sauce.
