Strawberry Speculoos Cheesecake

Cookie Crust
6 oz speculoos cookies – 5 1/2 tablespoons melted butter
In a food processor, crush the speculoos cookies. Add the melted butter to the cookie crumbs.
Use a rectangular baking frame (about 8 x 10 1/2 inches) or a springform pan.
Line the sides of your pan with strips of acetate or parchment paper.
Pour in the cookie mixture and press down firmly. Freeze for 2-3 hours.

Cheesecake Cream
1/4 cup heavy cream (at least 33% fat) – 1 cup mascarpone – 1 1/4 cups Philadelphia cream cheese – 1/2 cup powdered sugar (about 60 g) – Vanilla powder
Whip all the cold ingredients together until you get a whipped cream texture.

Assembling the Cheesecake
1 small package ladyfinger cookies – A little milk
Spread a layer of cream over the speculoos crust, then place the ladyfingers, dipping them in milk as you go.
Pour the strawberry jam on top, then add another layer of cream. Smooth the layers with a spatula.
Chill overnight in the fridge.

Decoration
6 oz speculoos cookie butter – Strawberries – Praline
Warm the speculoos cookie butter in the microwave for a few seconds, pour it over the cake, and let it set in the fridge.
Remove the cheesecake from the pan, then press praline around the sides.
Pipe dollops of cream, add strawberries or strawberry halves, edible flower petals, a speculoos cookie, etc.
Serve well chilled.

Popotte’s Tips:
I recommend using a reduced-sugar (not sugar-free) jam, since speculoos cookies are already quite sweet.
