Arbi leaves, also known as Colocasia leaves or taro leaves, are edible and often used in Indian cuisine. We make patra from arbi leaves but today I have made instant dhokla with arbi leaves. This is new version of patra .
Colocasia leaves are a good source of dietary fiber, vitamin A and rice in iron, They may help in regulating blood sugar levels.

Steps

First of all, wash and dry the arbi/ colocasia leaves and cut out the thick veins and clean them. Then cut them finely with scissor.

Add 1 cup of water to tamarind and jaggery and boil it. After it cools down, strain the pulp.

Sieve the gram flour and add all the masala, oil to it and mix it well. Now add jaggery water and if required plain water to make a medium thick batter.

After that, add chopped arbi leaves and mix well.

Now preheat the steamer. Add Eno to the mixture, add 1 tbsp of water and whisk it. Grease a plate with oil, add dhokla batter.spread sesame seeds on it and cover it for 12 to 15 minutes and let it steam.

After that check and take it out. When it cools down, remove the dhokla. This spongy dhokla looks tasty as it without adding tempering.

Now take the ingredients for the tadka and add it. Garnish with coriander and desiccatedcoconut, serve the Arbi leaves instant dhokla with green chutney.
