Ingredients

15 minutes prep + 35 minutes baking
10 slices of protein bread
  1. 5 3/4 ozpasteurized egg whites (165 grams)
  2. 3 1/2 ozchickpea flour (100 grams)
  3. 1 tablespoonGreek yogurt
  4. 1 teaspoonbaking powder (for savory recipes)
  5. 1 teaspoonolive oil
  6. 1 pinchfine salt
  7. Dried rosemary, to taste
  8. Tools
  9. 1large mixing bowl
  10. 1electric mixer
  11. 1kitchen scale
  12. 1tablespoon
  13. 1teaspoon
  14. 1 loafpan
  15. 1 sheetparchment paper
  16. Storage
  17. You can store the protein bread covered at room temperature for 3-4 days

Steps

15 minutes prep + 35 minutes baking

    Beat the egg whites with a pinch of salt until stiff peaks form and the mixture is fluffy.

    Gradually add the chickpea flour, gently folding it in with upward motions to keep the batter airy.

    Fold in the Greek yogurt, baking powder, and olive oil, mixing until the batter is smooth.

    Add the spices and mix again.

    Pour the batter into a loaf pan lined with parchment paper.

    Bake in a preheated oven at 350°F (180°C) for about 30-35 minutes. Check doneness with a toothpick.
