This chicken stew is a delicious bowl of comfort food that happens to be packed with awesome flavours, nutritious veggies & the goodness of chicken.
Cooking Instructions

Wash the chicken properly & set aside.

Heat a pressure cooker, add 2 tbsp butter, then add the whole spices & the bay leaf.

Allow them to sizzle just for a few seconds.

Add the chopped onions, ginger, garlic & saute for 1,2 minutes.

Then add the washed chicken pieces & saute until the colour changes to white

Throw in the veggies & mix well.Add salt to taste, crushed pepper & hot water.

Pressure cook for 2 whistles on low flame.

Transfer the chicken stew to a serving bowl.Garnish it with butter & pepper.

Serve the hot, healthy, delicious, weight loss dinner chicken stew with homemade buns.

My slightly lighter take on Dwenjang Jjigae, which is a pungent Korean stew made with dwenjang (basically Korean style miso). (Note that stew in Korean cuisine isn't that super thick, stand a fork up in it type of texture, but something in between a soup and stew. My recipe is much closer to soup.)If you don't have dwenjang, you can totally use Japanese style miso. The flavor and aroma are less pungent, but the result will still be delicious.Just put the ingredients in a pot, bring 'em to a boil, and then let them simmer, and that's it.We usually enjoy this with a bowl of steamed rice. x -
