Preheat the oven to 350°F (175°C). Line a baking sheet with parchment paper.

Place the pitted dates in a bowl and cover with boiling water. Let them soak for 10 minutes.

In a bowl, mix the oats (you can blend them into a powder if you prefer), baking soda, salt, and cinnamon.

In a blender, blend the coconut oil, egg, and soaked dates. If you like, add a few drops of orange blossom water at this stage.

Stir the wet mixture into the oat mixture. Add the walnuts and mix with a spatula.

Scoop out balls of dough using a tablespoon. Place them on the baking sheet and gently flatten them. Bake for 10-12 minutes, until golden.

Let the cookies cool. Enjoy!
