Passion Fruit and Kaffir Lime Floating Island (Île Flottante)

Mr. Popotte loves floating islands, so I thought I’d make him happy!
This is a very traditional French dessert made with vanilla custard (crème anglaise) and fluffy meringue.
Here, I’ve given it a twist—not in form, but in flavor. I went for exotic notes with a custard flavored with passion fruit and kaffir lime (brought straight from Réunion by my brother- and sister-in-law 😊).

Passion Fruit and Kaffir Lime Custard
Heat the milk over low heat.
In a mixing bowl, whisk the egg yolks with the sugar until pale and creamy.
Slowly pour the hot milk over the egg yolk and sugar mixture, whisking constantly.
Return the mixture to the pot and cook, stirring constantly, until it reaches 181°F (83°C) and thickens.
Set aside and let cool.
Stir in the passion fruit purée and ground kaffir lime.
Let cool to room temperature, then refrigerate for 2 hours.

Meringue
Beat the egg whites with a pinch of salt until soft peaks form, then gradually add the powdered sugar.
Spoon the meringue into silicone half-sphere molds.
Microwave on the lowest power for 1 minute 30 seconds (adjust time based on your microwave’s power).

Assembling the Floating Islands
When ready to serve, ladle the custard into bowls and gently place the meringue on top.
Sprinkle passion fruit seeds around the meringue.
Top the meringue with caramel shards for decoration.
