Ingredients

45 minutes
  1. 3-4 quarts(12-16 cups) popped popcorn
  2. 1 stickbutter
  3. 1 cupsugar
  4. 1/4 cupKaro syrup (The light colored one)
  5. 1/2 teaspoonsalt
  6. 1/2 teaspoonvanilla extract
  7. 1/2 teaspoonbaking soda
  8. Yellow food coloring

Cooking Instructions

45 minutes

    Preheat oven to 225 degrees Fahrenheit.

    Butter a large roasting pan. I melted additional 1/2 stick of butter and brushed it in the pan. You could also just coat with baking spray.

    Pop the popcorn and place in roaster pan. I used 2 bags of microwavable popcorn for 16 cups.

    Melt stick of butter

    In a microwave safe bowl add butter, sugar, Karo syrup, 1/2 teaspoon salt and stir to mix.

    Cook in microwave on high for 1 minute. Stir, return to microwave and cook additional 3 1/2 minutes. * my microwave is powerful. I had to cut power to 70% after 1 1/2 minutes so it didn't boil over.

    Remove from microwave add vanilla, 1/2 teaspoon baking soda and a few drops (I used 3 drops) yellow food coloring. Stir throughly then add to popcorn and stir so all popcorn is coated. After initial mixing I used gloves to get all the popcorn coated.

    Place in oven for 45 minutes stirring every 15 minutes. Cool before eating or storing in airtight container.
