Ingredients

  1. Marinade
  2. 2 lbsboneless, skinless chicken thighs (cut into 1.5-inch chunks)
  3. 1/2 cupbanana ketchup (or ketchup + 1 tbsp sugar)
  4. 1/4 cupsoy sauce
  5. 1/4 cupbrown sugar
  6. 1/4 cuppineapple juice
  7. 2 tbspcalamansi juice (or lemon/lime juice)
  8. 4 clovesgarlic (minced)
  9. 1 tspground black pepper
  10. 1 tsppaprika (optional)
  11. 1 tbspchili sauce or a few dashes of hot sauce (optional)
  12. Basting
  13. 1/4 cupbanana ketchup
  14. 1 tbspsoy sauce
  15. 1 tbspoil
  16. 1 tspsugar (optional)
  17. Other
  18. Bamboo skewers (cut to fit your air fryer basket & soaked in water for 30 mins)
  19. Cooking spray or brush-on oil

Cooking Instructions

    In a bowl, mix together all marinade ingredients. Add chicken pieces and toss to coat. Cover and marinate in the fridge for at least 4 hours, preferably overnight for full flavor. Thread 4–5 pieces of marinated chicken onto each soaked skewer. Tip: Don’t pack them too tightly — leave small gaps for even cooking.

    Preheat your air fryer to 375°F (190°C) for 3–5 minutes. Lightly grease the air fryer basket with oil or spray. Place the skewers in a single layer (work in batches if needed). Air fry at 375°F (190°C) for 10–12 minutes, flipping halfway. Baste with the basting sauce during the last 2–3 minutes for a sticky, glossy finish.

    Check for doneness — internal temp should be 165°F (74°C). Let rest for 2 minutes before serving. Serve hot with garlic rice, pickled papaya (atchara), or a vinegar dipping sauce. ✅ Tips: If skewers don’t fit, you can lay the chicken pieces flat (no skewers) and air fry in batches. Want a smoky taste? Add a drop of liquid smoke to the marinade. Pineapple chunks between chicken pieces are optional and add great flavor!
