Ingredients

Approximately 1 hour start to finish.
  1. 12-16 cupspopped popcorn
  2. 1 cupsalted peanuts chopped (optional)
  3. 1 cupbrown sugar
  4. 1 1/2 sticksmelted butter
  5. 1/4 cuplight corn syrup
  6. 1/4 teaspoonbaking soda
  7. 1/2 teaspoonsalt
  8. 1/2 teaspoonvanilla extract

Cooking Instructions

Approximately 1 hour start to finish.
  1. 1

Preheat oven to 225 degrees Fahrenheit.

  2. 2

Spray a large roasting pan with cooking spray or coat with 1/2 stick of melted butter(I use a disposable aluminum pan.)and

  3. 3

Pop the popcorn. (no salt) Add popcorn and peanuts (optional) to roasting pan,set aside.

  4. 4

Melt butter in a microwave safe container, then add brown sugar, corn syrup and salt. Combine throughly. Microwave mixture one minute, stir and microwave an additional 3 1/2 minutes. *If you have a higher wattage microwave reduce the power to 60 % - 70 % (enough to keep it bubbling but keep it from exploding in the microwave). Keep your eyes on it.

  5. 5

Add baking soda and vanilla to the mix and stir throughly.

  6. 6

Pour mixture over the popcorn stirring until all are coated. Bake 45 -60 minutes stirring every 15 minutes. It is ready when the coating is hardened. Allow to cool before putting in a container. I store it in a zip lock bag.
