Ingredients

2 people
  1. 3 cupscooked rice (preferably basmati rice)
  2. 4eggs
  3. 2 tablespoonsVegetable oil
  4. 1 tablespoonsesame oil (optional but adds nice flavor)
  5. 1medium onion
  6. Lots of Chopped vegetables (green, red and yellow bell peppers, green beans)
  7. 2 clovesgarlic(minced)
  8. 1 tablespoonsoy sauce (optional but gives it a little bit color and flavor)
  9. Seasoning cubes, salt and pepper to taste
  10. 1/2 tablespoonscurry and thyme
  11. TIPS: use cold rice to avoid soggy rice. You can add scotch bonnets for extra spicy. Stir-fry on high heat with minimal oil to lock in flavor and preserve nutrients &crunch on peppers

Steps

  1. 1

    Scramble the Eggs:
    Crack the eggs into a bowl, season lightly with a pinch of salt, then beat.
    Heat 1 tbsp of oil in a large pan, pour in the eggs, and scramble until cooked.
    Remove from the pan and set aside

  2. 2

    Sauté Aromatics:
    In the same pan, add another tablespoon of oil.
    Add chopped onions and garlic; stir-fry for 1–2 minutes until fragrant.

    Add Veggies & Seasonings:
    Add your chopped bell peppers and green beans as well as other veggies of your choice.
    Sprinkle in curry, thyme, seasoning cube, salt, and pepper.
    Stir and let cook for about 3–5 minutes.

  4. 4

    Add the Rice:
    Add the cooked rice and mix thoroughly with the veggies.
    Add soy sauce (if using) and stir to coat the rice evenly.

  5. 5

    Add the Eggs:
    Return the scrambled eggs to the pan and mix them in.
    If using sesame oil, drizzle it in now and toss everything together.

  6. 6

    Garnish and Serve:
    Turn off the heat, Serve hot with peppered turkey or chicken or beef (a post on how to prepare peppered turkey, chicken or beef will be published here soon), fried plantain and chilled fruit juice..
