I made this for a fast lunch on a busy day. Cooking doesn’t have to be complicated— a few good ingredients and love🥰 go a long way. @ZEEHASKITCHEN @mrs_najeeb

Scramble the Eggs:
Crack the eggs into a bowl, season lightly with a pinch of salt, then beat.
Heat 1 tbsp of oil in a large pan, pour in the eggs, and scramble until cooked.
Remove from the pan and set aside - 2
Sauté Aromatics:
In the same pan, add another tablespoon of oil.
Add chopped onions and garlic; stir-fry for 1–2 minutes until fragrant. - 3
Add Veggies & Seasonings:
Add your chopped bell peppers and green beans as well as other veggies of your choice.
Sprinkle in curry, thyme, seasoning cube, salt, and pepper.
Stir and let cook for about 3–5 minutes. - 4
Add the Rice:
Add the cooked rice and mix thoroughly with the veggies.
Add soy sauce (if using) and stir to coat the rice evenly. - 5
Add the Eggs:
Return the scrambled eggs to the pan and mix them in.
If using sesame oil, drizzle it in now and toss everything together. - 6
Garnish and Serve:
Turn off the heat, Serve hot with peppered turkey or chicken or beef (a post on how to prepare peppered turkey, chicken or beef will be published here soon), fried plantain and chilled fruit juice.. - 7
