This meat is delicious and goes a long way, perfect for gatherings! Mine is small, but you can make a larger batch by tripling the ingredients.

For the dough: Combine the flour, yeast, and salt. Mix everything together, then add water last. Knead the dough and let it rest.

Once the dough has rested, divide it into balls of about 5 2/3 oz (160 grams) each. Roll them out and cook them with a little oil in a large skillet. (It's best to make these a few hours before the meat is ready.)

For the filling: Chop all the vegetables and season with oil and salt to taste. For the meat: Slice the pork into steaks, season with salt and your preferred spices, then add mustard, milk, and lemon juice. Let it marinate overnight. The next day, thread the meat onto a skewer, layering with onion, parsley, and lemon between each piece.

Roast in the oven for about 2 1/2 hours, depending on your oven. Once done, serve on skewers.

Place the tortillas on a plate, fill them with the meat, vegetables, and cheese sauce, then fold them up like a handkerchief. Enjoy!

For the cheese sauce: Hard-boil the eggs, peel them, and blend them with the cheese, oil, water, and seasonings until smooth.
