Mixed Longan and Fruit Sweet Soup (Chè Nhãn Nhục Thập Cẩm)

Thoroughly wash the pandan leaves. In a pot, cook the pandan leaves with 8 1/2 cups water (2 liters) and the dried longan for 5 minutes. Turn off the heat, cover, and let the pandan leaves infuse and the longan soften for about 30 minutes.

While waiting, prepare the agar jelly. Follow the package instructions, using 1/4 cup sugar (about 50 g) and 4 1/4 cups water (1 liter). Once boiling, reduce the heat and simmer for 5 more minutes. Turn off the heat and let the jelly set in the pot. Once set, cut into bite-sized strips, transfer to a bowl, and chill in the refrigerator.

To the first pot, add 3/4 cup sugar (about 150 g), 1/4 teaspoon salt, and the rambutan. Simmer gently until the longan is soft. Add the red dates and cook for another 5 minutes, then add goji berries and chia seeds. Turn off the heat.

Serve with the chilled agar jelly. You can also add lotus seeds, snow fungus, lychee, or canned longan if desired.
