Colourful, exotic, and refreshing, this butterfly pea bubble tea is a wonderful variation of classic Taiwanese boba tea, made with Thai butterfly pea flower tea and fresh coconut milk. It's dairy-free and vegan, and because it's made with blue pea tea instead of black tea, it's also caffeine-free!

First of all,add dried butterfly pea flowers into boiling water in a saucepan.

Now to make bule boba pearl, heat a pan. add sugar water and bule pea powder in the pan. Add 1 tablespoons of tapioca starch in it. Stir well. Now add the rest of tapioca flour and immediately mix it.Take it out.

Give it a few seconds for the slimy paste to form. Fold in tapioca starch with a fork until they start to stick together. Transfer to a flat surface and knead until the dough becomes smooth. If more sticky, sprinkle dry tapioca flour on surface.

Divide the dough into 2 and roll each forming thin sticks. Cut them into small pieces. Try to make them as even in size as possible and should be small enough to pass through your straw. Roll each piece in between your palms to turn them into small balls.

Bring 2 cup of water to a rolling boil in a small pot or saucepan. Add the tapioca pearls to the boiling water and let it cook for 15 minutes or longer until the desired consistency (soft or chewy) is achieved. They will also become darker as they cook.Transfer tapioca pearls into a sugar syrup or a bowl with a little water to prevent them from sticking together. Blue pea boba pearls are ready.

To assemble the blue bubble tea, divide the blue tapioca balls among tall glasses,add ice cubes and pour in coconut milk.

Finally, pour the cold butterfly pea tea, stir well and serve chilled.

Sip your delicious butterfly pea boba tea with a straw and scoop up the boba pearls with a spoon. Enjoy!
