Ingredients

Prep 30 minutes plus cooling
9 servings
  1. 1 box (12 ounce)vanilla wafers crushed * see note in directions
  2. 1/2 cupbutter melted
  3. 2 (8 ounce)packages cream cheese softened
  4. 1 cupconfectioners sugar
  5. 3 tablespoonsfrozen orange juice concentrate, thawed
  6. 1 tablespoonvanilla extract
  7. 1 pinchsalt
  8. 1 (8 ounce)package whipped topping, thawed
  9. 2 1/2 tablespoonsorange gelatin

Cooking Instructions

Prep 30 minutes plus cooling

    Place parchment paper in a 8x8 baking dish overlapping sides for easy removal.

    Combine melted butter and wafer crumbs. Press into bottom of baking dish, place in freezer for 30 minutes until firm. *Note: I found a full box of wafers makes a very thick crust for a 8x8 dish. You may want to decrease amount of wafers and butter used.

    In large bowl beat cream cheese until smooth, 2-3 minutes.

    Add confectioners sugar, orange juice concentrate, vanilla extract and salt. Beat additional 2-3 minutes until smooth. Fold in 1/2 the whipped topping and combine.

    Take 1/2 the filling and spread over crust.

    Add gelatin to remaining mixture and mix 1-2 minutes until slightly thickened. Spread over cream cheese layer. Top with remaining whipped topping,cover and refrigerate 4 hours or overnight.

    Optional; garnish with orange zest, orange slices or orange candy slices.
