Microwaving the potatoes makes this dish quick and perfect for summer. It’s also nutritious and fits vegetarian and vegan diets.

Wash and scrub the potatoes, then cut them into cubes. Add paprika, extra-virgin olive oil, salt, and rosemary, and toss to coat evenly.

Microwave for 12–13 minutes, stirring every 3–4 minutes. During the last stir, sprinkle with Parmesan cheese.

Cut the smoked tofu into cubes and marinate for 5 minutes in a mixture of juice from 1 lemon, parsley, and soy sauce. Sauté in a pan with the marinade.

Serve the potatoes and tofu together. Enjoy with a fresh, colorful mixed salad.
