Handmade Bubble Milk Tea

This recipe includes instructions for cooking homemade tapioca pearls (after freezing). Bubble milk tea has a smooth texture, chewy pearls, rich tea flavor, and creamy milk. With the right amount of sugar, it's a high-calorie but satisfying and energizing drink that's very popular.
Note: Before cooking the pearls, rinse them with water to remove the outer layer of starch that prevents sticking. This helps avoid a starchy taste in the finished pearls. The same applies to tangyuan (glutinous rice balls).

Cook the raw tapioca pearls: Bring water to a boil, add the pearls, cover, and simmer over medium-low heat for about 30 minutes. If using homemade frozen pearls, cook for an extra 10 minutes. Stir occasionally to prevent sticking. (For store-bought pearls, follow the package instructions. You can also steam them in a rice cooker.)

If the water level is low, stir to prevent sticking. While the pearls are still hot, add the granulated sugar and stir until fully dissolved. Turn off the heat, cover, and let sit for 20–30 minutes until the centers are cooked through.

Store any unused pearls in an airtight container. Once cooled, cover and refrigerate. To reheat, microwave at 1000W for 1 minute (they will be soft but less chewy).

Steep the black tea bag in hot water for at least 5 minutes for a stronger tea flavor.

Add the desired amount of pearls and milk, and mix.

Finally, add extra ice and sugar to taste. Enjoy!
