Combine salt and flour. Add a little water at a time and make soft dough (a little softer than for regular rotli). Knead it well for 8 to 10 min. Add oil and knead again until the oil is absorbed thoroughly. Smoothen it, cover and allow it to rest for minimum 15 minutes.

Make big 5-6 big portions and smoothen each of them. TAKE A VERY GOOD AMOUNT OF DUSTING on a large rolling mat. Roll a portion of dough to a very thin rotli out of it. Cut it round using a large lid with sharp ages. Gently lift the rotli and place it on a hot pan.

Lightly cook it on both the sides. Take it out in a cloth and cover well until the use. You can put them in a zip lock bag and then freeze them for later use.

It is advisable to warm them a bit just before wrapping so that they are soft enough to fold well.

The same recipe can be used to make pastry for spring rolls and samosa. Cook them just 20% so that they do not look like rotli.
