Italian Appetiser - Tomato Basil Bruschetta

I love Bruschetta and have made many times. I’ve enjoyed as Breakfast or Lunch and it’s ideal to enjoy during Italian Summers or for that matter as an Appetiser too. The most important thing to remember is very good quality tomatoes, EVOO (Extra Virgin Olive Oil) that needs to be used when making Bruschetta- I’ve used Tomato and Red Cherry Tomatoes

Wash the tomatoes and cut into small pieces. Roughly chop basil leaves, add to a bowl, add EVOO, Balsamic Vinegar, oregano and salt, stir and mix well- set to rest for 30 mins

Mix and rest for 30 mins

In a grill pan heat in high and add sourdough slices, toast in high heat both sides

Set aside and while still hot rub the toasts with garlic
- 5
Add the Tomatoes and add little of the Balsamic and Olive oil on it

Plate and enjoy 😊
