Sausage and Rice Stuffed Acorn Squash

Preheat oven to 400 °F. Cut your Acorn squash in half, remove the seeds and bake face down on baking sheet for 45min or until fork tender

In a large (deep-ish) pan, break up and brown your sausage. (add a little olive oil if your sausage doesn't have a lot of fat) the olive oil will help it along.

Once the sausage is browned, add your onions and garlic. Sautee until they become translucent and tender.

Add your cooked rice and your seasonings. Mix to combine.

Add your box of Stove Top Stuffin mix. Mix everything to combine and add your beef broth. Let everything cook together for 5-6 mim, then turn the heat to low/keep warm and wait until your Acorn squash is roasted.

When your squash is cooked, pull it out of the oven and flip them over to expose the flesh/meat (remember you baked them cut side down)

Just before removing your stuffing/filling off the heat, add in your spinach and mix everything to combine.

Spoon your stuffing into your squash, piling it as high as you'd like. Sprinkle with a bit of cheese (optional) and place under the broiler for 3-5min or until cheese is melted. Enjoy!
Tips
you may have extra filling left over. its delicious on its own as well! enjoy with a side salad.
