The trusty can of tuna you keep at home is so practical and versatile. Last night we wanted to watch movies, so I decided to make something to snack on while we watched. Here’s the result.

In a bowl, mix the flaked tuna with the red onion, celery, bell pepper, and cilantro.
In another bowl, slowly whisk the olive oil into the mayonnaise. Gradually add the vinegar while whisking, then season with salt and pepper.
Add the mayonnaise mixture to the tuna and vegetables and mix well. - 2
Preheat the oven to 350°F (178°C).
Divide the tortilla chips between the trays.
Spoon the tuna salad over the chips.
Top with the shredded mozzarella cheese. - 3
Sprinkle the bell pepper, tomato, and green chili pepper on top.
Bake the trays until the cheese is melted.
Once the cheese is melted, sprinkle the green onions and cilantro on top.
Serve immediately.
Options:
Serve with mashed avocado, pebre sauce, or sour cream.
