Ingredients

Prep time -10 mins, Cooking time -30 mins
3-4 servings
  1. 1medium size eggplant washed and cut into cubes
  2. 1/4 cuppumpkin washed, peeled and cut into cubes
  3. 1medium size yam washed, peeled and cut into cubes
  4. 2medium size potatoes washed, peeled and cut into cubes
  5. 4-5long beans washed and cut into 1” sizes
  6. 1medium size Raw Banana or Plantain washed, peeled and cut into roundels
  7. 1 tspcumin powder
  8. 1 tspcoriander powder
  9. 1 tspred chilli powder
  10. 1 tspturmeric powder
  11. 1 Tbspginger paste
  12. 1 tspgaram masala powder
  13. 1 cuphot water
  14. 1/8 tspsalt
  15. 2-3green chilli slit
  16. 1/2 tspcumin seeds
  17. 1/4 cupmustard oil
  18. 1bay leaf
  19. 1/2 tspcumin seeds
  20. 2/3cloves
  21. 2-3green cardamoms
  22. 1whole red chilies
  23. Garnish with roasted peanuts and garam masala powder. Serve with Khichudi

Steps

Prep time -10 mins, Cooking time -30 mins
  1. 1

    Wash all veggies and cut into cubes.

    In a pan heat mustard oil, add whole spices of bay leaf, cumin seeds, whole red chilli, cloves, cinnamon stick and green cardamoms, stir for 10 seconds, add the veggies that will take time to cook. Add potatoes, yam, plantain and stir well. Then add pumpkin, long beans, eggplant, green chillies and stir well.

    Add ginger paste, cumin powder, coriander powder, red chilli powder, turmeric powder and mix well, cook for 5-7 mins, add long beans and salt, garam masala powder, hot water and mix well

    Cover to cook until veggies are cooked but not mushy to touch

    Garnish with roasted peanuts and garam masala powder. Set aside

    Serve with Khichudi and enjoy 😊

Tips

Veggies that needs time to cook should be added first and pumpkin, eggplants at the end as it takes less time to cook
Veggies should be cooked yet have a crunchy texture
