Wash all veggies and cut into cubes.

In a pan heat mustard oil, add whole spices of bay leaf, cumin seeds, whole red chilli, cloves, cinnamon stick and green cardamoms, stir for 10 seconds, add the veggies that will take time to cook. Add potatoes, yam, plantain and stir well. Then add pumpkin, long beans, eggplant, green chillies and stir well.

Add ginger paste, cumin powder, coriander powder, red chilli powder, turmeric powder and mix well, cook for 5-7 mins, add long beans and salt, garam masala powder, hot water and mix well

Cover to cook until veggies are cooked but not mushy to touch

Garnish with roasted peanuts and garam masala powder. Set aside

Serve with Khichudi and enjoy 😊
Tips
Veggies that needs time to cook should be added first and pumpkin, eggplants at the end as it takes less time to cook
Veggies should be cooked yet have a crunchy texture
