Check the beans to ensure that they do not have small stones or other foreign objects. Wash the beans and soak them in a pot with plenty of water from one day to the next. The next day, discard the water.

In a frying pan, heat the oil and brown the ribs on all sides, then set them aside on a plate.

In a deep pot, heat the oil left from the ribs. Sauté the onion with the garlic, celery, pumpkin, and carrot. Add the oregano, merquén (hot chili pepper powder), cumin, parsley, and cook for about 5 seconds.

Add the ribs, beans, and pork broth, bring to a boil, reduce the heat, cover the pot, and let the liquid simmer slowly for 1 hour or until the beans and ribs are tender.

Add the cabbage, cover and cook for 10 more minutes
Let it rest for 10 minutes and serve the beans with the ribs.
