California Farm Tomato Powder

I have been experimenting with Cookpad Maryam’s brilliant no-salt tomato powder recipe from Isfahan. She sundries tomato slices, we sundry tomato wedges.
The direct contact between wet tomatoes and a hard surface in the open air could create mold here. I laid the wet slices on paper towels in the sun in the morning.
They dried enough in one day on the paper in the sun so the tops were not sticky anymore. I flipped them over daily and had dried brittle tomatoes in four days.
Sundrying reduces the tomato weight by 90%. I dried ten pounds of beefsteak size tomatoes to make one pound tomato powder. My food processor makes chunks to dry further, my coffee grinder makes the powder.
One teaspoon of powder makes a delicious cup of soup in two minutes.

Ingredients

2 minutes for soup, 5 days for powder
2 people, one pound, no-salt powder
  1. 10 poundsripe round tomatoes, (12 large beefsteak tomatoes made ten pounds), sliced horizontally in 1/2” thick slices with 1/2” thick ends
  2. 1 Tbslong rice to serve as desiccant in storage jar
  3. Equipment: sunny spot, garden table, paper towels, oven racks, food processor for coarse, coffee grinder for powder, empty teabag, pint mason jar
  4. Cost: farm free or $1/pound at the farmers market

Steps

2 minutes for soup, 5 days for powder
  1. 1

    Start early morning on a sunny day. Pick, wash and wipe the tomatoes, trim off the two ends in 1/2” thick slices, then slice 1/2” thick horizontal rounds.

    Lay ends and rounds in full sun on paper towels. Paper towels get sticky, oven racks work better. Drizzle any leftover tomato juice on top of the slices.

    Next morning, top of slices should be dry. Flip tomato slices, remove paper towels, or they will stick. Flip rounds daily. Tomato ends don’t need flipping. My total drying time was four sunny days.

    When tomato rounds and ends are brittle and snap, process in food processor to chunks. Dry chunks one more day.

    Spread tacky tomato chunks on clean large oven tray and dry another day at 170F degree in oven. Then process in food processor to till you have a coarse chunky powder.

    Grind coarse chunky powder next in coffee grinder to fine powder. Store in airtight mason jar. Put Tbs of dry rice in used teabag in jar to keep tomato powder desiccated and prevent from clumping. Fresh till next harvest for twenty bowls of delicious instant tomato soup, or pasta dinners. One teaspoon makes one cup. Pour boiling water over.
