I love pancakes made with evaporated milk—they have a great flavor and turn out super fluffy. You have to try them, they're delicious!

In a bowl, combine 1 cup of evaporated milk (about 240 ml), 1 egg, 1 1/2 cups pancake mix (about 195 grams), melted butter, and a splash of vanilla extract. Heat a skillet over low heat, add butter, and pour in some of the batter.

When bubbles form on the surface, flip and cook for about 3 minutes on each side, then remove from the pan.

Place the pancakes on a plate and top with sweetened condensed milk or strawberry jam, as desired.
