One of my favorite Filipino desserts: Buko Pandan! This pandan dessert is filled with coconut, pandan, and other fruits that make it so hydrating and refreshing. "Buko" means "young coconut"! Perfect for family gatherings or potlucks!

One of my favorite Filipino desserts: Buko Pandan! This pandan dessert is filled with coconut, pandan, and other fruits that make it so hydrating and refreshing. "Buko" means "young coconut"! Perfect for family gatherings or potlucks!

Make tapioca pearls (boil in water for 15 mins).

Blend pandan leaves with coconut juice and strain.

To make the sauce, heat coconut milk in a pan and bring to a simmer. Add in the palm sugar and mix to dissolve.

Remove from heat then add in the pandan juice and coconut syrup to the mixture.

In a big bowl, add in all the young coconut, coconut jelly, pandan jelly, lychee, and tapioca pearls.

Pour in the sauce and serve!
