Homemade Paneer or Cottage Cheese and Masala Grilled Paneer

Being a nutritionist, I am always looking to include protein or increase the protein content in each recipe. Paneer or cottage cheese is a highly recommend and nutritious source of protein for vegetarians or lacto vegans. It's made with dairy milk of cow or buffalo.The milk is boiled, curdled with lemon juice or vinegar and then the whey is collected separately. The remaining milk solids are washed and left to drain out water under a weight for a few hours. Then it is cut in large squares and stored in refrigerator. Numerous recipes can be cooked using it namely curry, roti, paratha, bhurji, samosa, sandwich, cutlets, kheer, Rasogullas, sandesh, Burfi, gulab jamun, laddu, pakoda, grilled or barbeque dishes, stir fry, pulao, biryani, mousse, pudding and many more mouthwatering dishes. I suggest we include homemade paneer in our daily diet as it is healthier and without any preservatives unlike market bought variety.

Ingredients

10 minutes+ 6 hours to set
4 servings
  • 2 litrefull cream dairy milk
    Paneer Matar Masala
  • 2 tablespoonslemon juice
    Dhaba Style Palak Paneer
  • 4 cupsclean, cold water
  • To make grilled paneer
  • 1 tablespooneach of red chilli powder, turmeric powder, kitchen king masala, aamchur powder, cumin powder, coriander powder, ginger garlic paste and garam masala
  • 1 tablespoonbesan or cornflour
  • 1 tablespooncurd
  • 1 tablespoonbutter and 1 teaspoon oil

Steps

10 minutes+ 6 hours to set
  1. 1

    First, heat the milk on medium heat till it reaches a boil. Mix in the strained lemon juice in small batches. Stir well for 2 minutes. Turn off the heat.

    The milk will curdle and water wil separate. Then keep it on counter for 10 minutes. Then line a strainer with a washed cloth and keep a large bowl below the strainer.

    Pour the liquid and let the water collect in the bowl. Keep it covered for use in paratha dough, curries or cooking pulao. Wash the milk solids in cold water four to five times.

    Make a small pouch, keep a weight on top and keep above a clean vessel to drain out the water for 5 to 6 hours. Then refrigerate the pouch wrapped in a wet cloth for 5 to 6 hours. Cut and Use as needed.

    To make grilled paneer, take a bowl. Add the above-mentioned spices, curd and cornflour or besan. Whisk the mixture well to incorporate the spices in each other. Then cut paneer in cubes. Marinate in the above paste for 2 hours in refrigerator.

    Heat a grilling pan or tawa or preheat air fryer or OTG for 10 minutes on 180 the. c. Arrange the paneer pieces on a greased tray or tawa or grilling pan or air fryer liner.

    Apply melted butter and oil on top and grill or air-fry till crispy, golden and cooked from all sides, turning in between.

    Serve with green chutney or any dip or sauce and enjoy.

Tips

Store paneer in a glass box filled with cold water in the refrigerator and change the water daily. It will stay fresh for a week .
